VITICULTURE
Region: Loire Valley more specifically in the Nantais vineyard, near the Atlantic Ocean, in the village of La Regrippière - east of Vallet.
Soil Type & Climate: Clay based soils with loam and schists. Maritime climate influence with a south-east exposure.
Vine growing: Guyot pruning. Sustainable viticulture with use of organic fertilizers and pheromones. Controlled natural green cover. Disbudding, cluster thinning and trellising performed annually.
Density: 6500 plants / ha.
Vines Age: from 15 to 25 years old.
Yield: 55 hl / ha.
VINIFICATION
Smooth pneumatic press followed by a cold settling of the grape juice between 18 and 24 hours. Traditional alcoholic fermentation with temperature controlled between 16°-18°C using selected dry active yeasts preserving both the grape variety and terroir. Then, the wine undergoes malolactic fermentation during 5 weeks at 20°C to soften and round out the palate.
Ageing: Lees ageing for 10 months in vats.
Malolactic Fermentation: 80%
Oak Treatment: 5% Neutral oak
TASTING
Brilliant pale hue with green tints. Nice nose of white-fleshed fruits and spring flowers. The palate is delicate, tense and plump with restrained exuberance. Great aromatic intensity, nothing superficial, persistent.
FOOD PAIRING
Seafood dishes such as Crab & Prawns, Fish Terrines, Poached Chicken with Seasoned vegetables, Pasta with Creamy sauces, Bloomy Cheeses.
Cellaring: 2 to 3 years.
Service Temperature: 10°C-12°C.
