TASTING

Translucide vermillon red.

Full of finesse evoking ripe cherries, freshly returned soil and earth.

Well-rounded and fresh. Fruit is light but intense. A relishing aftertaste, marked by cherry stones and spices, and the bewitching earthy flavour.

 

FOOD PAIRING

Mixed grills, game, pork roast with prunes, grilled flank of beef, cold meat and cheese platters…Serve between 15 and 17°C

Aging potential: 4 years

 

VITICULTURE

Clay-siliceous soils (60hl/ha) - Oceanic Limoux climate under Mediterranean influence - Between 721 and 820 feet in altitude.

Vines pruned in Guyot form.

 

VINIFICATION

Mechanical harvesting at night / Cold prefermentation with CO² / Fermentation at low temperatures 20-22°C / Extraction using punching technique / Without sulphites.

Maturing in concrete tanks with a small amount of wood to stabilise colour and fruits.
