Quality Sparkling wine made entirely from the Chardonnay grape under the strict rules of the Méthode Traditionnelle. Base wine is made in a similar fashion to still wine, fermented to dryness and then aged on its fine lees for 6 months in concrete underground vats. Prior to bottling, an aliquot of sugar and yeast is added to initiate the bottle with a second fermentation.
After 12 months ageing in bottles, in under cool dark conditions, the wine is disgorged and is ready to drink.
Residuals Sugar: 8-9gr/L
Malo-lactic Fermentation: 100%
Oak Treatment: none
Delicate aromatic flavours of fresh fruits and floral notes, this wine has a fine mousse while developing delightful honeycomb autolysis characteristics. Seductive on the palate that makes it for a mouthwatering finish with good length.
