Soil: Clay and limestone, in the middle of “Garrigues” scrubland.

 

VITICULTURE

Production: Hand picked 30 Hl/Ha yield

Sustainable agriculture : No herbicides, No pestecides, No chemical fertilisers, No irrigation.

 

VINIFICATION

Temperature controlled fermentation on skin - Indigenous yeast - Ageing on fine lees for four months  - No residual sugar.
