TERROIR

The hillside vineyards are located in the cooler part of the AOC to the southwest of Limoux at an
altitude of 350 meters. The climate is humid and temperate with a strong oceanic influence which means that the grapes ripen later here than in other areas.

Soil : Clay and Limestone

 

WINEMAKING

The grapes are picked entirely by hand.
They are then transported to the cellar in small crates, where they are immediately pressed. Alcoholic fermentation takes place at a low temperature in temperature-controlled stainless-steel vats. After the disgorgement, no dosage of sugar and no SO2 are added to this crémant rosé,
resulting in its unique taste.

AGEING: 16 months "sur lattes" (12 months is the minimum for a crémant)

 

TASTING NOTES

The nose is well balanced and the palate offers up notes of tart red berries, wild strawberries and
raspberries. A luscious, broad palate with a lovely freshness. The bubbles are fine and delicate thanks to a 16-month ageing "sur lattes". The aromas linger on the finish.

Best drunk at 10°

 

PAIRING

Enjoy with raw or lightly seared fish with the accompaniment of your choice.

This sparkling wine will also pair perfectly with oriental cuisine or spicy Asian dishes.
