TERROIR

The hillside vineyards are located in the cooler part of the AOC to the southwest of Limoux at an
altitude of 350 meters. The climate is humid and temperate with a strong oceanic influence which means that the grapes ripen later here than in other areas.

Soil : Clay and Limestone

 

WINEMAKING

The grapes are picked entirely by hand. They are then transported to the cellar in small crates,
where they are immediately pressed. Alcoholic fermentation takes place at a low temperature in temperature-controlled stainless-steel vats. After the disgorgement, no dosage of
sugar and no SO2 are added to this crémant, resulting in its unique taste.

AGEING: 24 months "sur lattes" (12 months is the minimum for a crémant)

 

TASTING NOTES

The noze offers aromas of pastries and grilled almonds are followed by menthol and citrus notes
such as mandarin, kumquat and orange zest. Great precision, minerality and vinosity in the mouth. A sparkling wine, made with no addition of sugars, that is concentrated and full of fresh grape aromas in a superb expression of the cool terroirs of Limoux.

Best drunk at 10°

 

PAIRING

Enjoy with an assortment of cheese gougères, smoked salmon toasts or pan-fried liver.
It also works extremely well with plain roasted poultry as the melt-in-the-mouth texture of the meat goes particularly well with the wine’s bubbles.
