100% PINOT NOIR

TERROIR

The vineyard is situated at 190m (620 ft) above sea level

where influences from the sea help moderate the southern French Mediterranean climate. Vines are planted on slopes of about 35% and face northeast, which provides an even maturation of the grape berries, favouring a good sugar/acid balance.

SOIL : Clay-limestone soil made upof fine gravel.

 

WINEMAKING

Traditional vinification in stainless steel tanks following a short maceration of between 8 and 10 days, with frequent punching down. Care is taken to select only healthy grapes; they will be harvested at optimum ripeness and early in the morning, and entirely de-stemmed.

Maturation 100% stainless steel vat with bâtonnage (stirring of the lees).

 

TASTING NOTES

Fresh, succulent and juicy on the palate. A lovely tension adds length and creates a deliciously drinkable character wiyh a soft finish.

 

FOOD PAIRING

Serve lightly chilled with duck gravlax, sea bream with black olive tapenade, and a strawberry and pistachio panna cotta.

Serve chilled between 13-15°C
